A healthy breakfast is very important for the kids. As their bodies and brains are developing they will need a healthy breakfast to refuel their bodies after a good night’s sleep. But many children skip the most important meal of the day. But a tasty meal would be rather hard to skip.

You must be thinking a meal which is healthy and tasty might require a lot of time and effort to prepare. Don't worry! I will share 5 amazing breakfast recipes which are healthy and simple to make. Some of these you can prepare beforehand if you don’t want the hassle in the morning.

Let’s “Strata” our day

The first recipe I have for you is a delicious berry breakfast strata. Stratas are like french toasts, just a different version of them. So for the first recipe, take six slices of whole-grain bread and line your baking dish with them. Top it with a healthy sprinkle of your favorite berries. Beat up 6 eggs with half a cup of milk and a teaspoon of vanilla essence.

Pour your egg mixture over the bread and fruit, and refrigerate overnight. In the morning, pull out your strata from the fridge and bake for about 30 minutes at 350°F (177°C). Pull out your strata once it’s golden and puffy and serve it to your children.

Sneaking in Some Greens

Green leafy vegetables are a hard sell with kids. My children hate them so I started to sneak veggies into their meals. Egg muffins with spinach in them will enrich their breakfast with fiber and iron. And it tastes delicious.

Add eggs to a medium bowl. And put in shredded cheese, cornflour, some mild salsa, cumin, and salt with some roughly cut fresh spinach. Stir until all the ingredients are mixed with the eggs. Grease up your muffin tin and add your mix and bake. Serve them warm with a side of fruits and crackers.

Staying Ahead of the Game!

This recipe is very simple to make and tastes amazing with a bright tropical flavor. And you can stir up this overnight recipe in only 5 minutes. Overnight oats with greek yogurt and mango can be a breakfast option for the whole family. Having breakfast ready and waiting in the refrigerator ensures a healthy start to the day if you have a very busy morning and it is also a great strategy when you have a new baby in the house.

Cut your mango into small cubes (without skin) and add whole milk greek yogurt, shredded coconut, some honey, and a bit of vanilla extract. Stir all the ingredients together and put them in airtight containers. Refrigerate them overnight and serve cold. If you do not have mango you can replace it with blueberries, raspberries, and diced-up strawberries. Pro-tip, you can grind your oats in a blender for a smoother texture.

A Smoothie Goes a Long way

Lately, I have been on a mission to make everything delicious and healthy. And that has led me to do many experiments, some were huge successes, and some not so much. One of those successes I found in a Chocolate smoothie with veggies! I know that sounds odd but this breakfast smoothie is super creamy and packed with protein, fiber, iron, and vitamin C. 

I start with a base of chocolate milk with low sugar content. If you want you can start with regular milk with two tablespoons of cocoa powder in it. Add some banana, spinach, zucchini, and avocado into the milk and blend until all the veggies are evenly mixed up. I usually don't start blending at high, rather prefer to start on low and work up to high. You can also change up the ingredients to your liking adding apples or mangoes will give a whole different flavor to your smoothie.

A Vegan Option?

Banana pancakes without eggs or milk might seem like a tricky dish to crack. The first time I planned on making them I had a lot of questions, will they be fluffy enough? Will they even taste good? But to my surprise, it is a rather easier dish to make and it has a serious fluff and is packed with delicious banana flavor. 

Take a very ripe banana and mash it up with a spoon. Try and get all the big lumps out for a smoother final texture. After you have the desired consistency with the banana mix, add whole wheat flour, vanilla extract, cinnamon, vegetable oil, baking powder, and any nondairy milk. Mix all the ingredients into a thick batter. Heat your non-stick pan with some oil, put in your batter, and flip it to cook it through. You can also add some chia seeds if you want. If you want these vegan treats to be gluten-free just replace the whole wheat flour with buckwheat flour. This recipe is great if you have any children with allergies or intolerances or simply if you run out of eggs and your kids are craving some pancakes.
