  • 30 slices cocktail rye or pumpernickel bread.

  • Add water, butter, salt and cayenne to a boil.
  • Add flour all at once.
  • Stir it until it takes the form of a smooth ball.
  • Remove from the heat.
  • Let it stand for 5 minutes.
  • Add some eggs (one at a time).
  • Beat well after adding each egg.
  • Continue the beating until the mixture gets smooth and shiny.
  • After this, you have to stir it in Gruyere and mustard.
  • On a greased baking sheet, drop 1-inch balls 2-inch apart.
  • Sprinkle it with the Parmesan cheese.
  • Bake at 425 degrees for 15 to 20 minutes until it gets a golden brown colour.
