Only Apple Pie Recipe You Need To Make Your Soul Happy

Apple pie is one of those desserts that everyone loves, right? It's the perfect comfort food, and it's always a hit at any party or gathering. But what if you could make an apple pie that is vegan, gluten-free, and sugar-free?

That's where my recipe comes in! This simple vegan apple pie is so delicious, you'll never miss the dairy, gluten, or sugar. And it's so easy to make, even beginner bakers can do it.

I've included step-by-step pictures and instructions, so you can follow along every step of the way. And I've added a few encouraging words along the way because I know that baking can be intimidating sometimes.

Ingredients needed

Here are a few Apple pie ingredients that you will need to have in order to make delicious Apple Pie:

  • Pie Crust – For an easier pie, it’s fine to use store-bought vegan pie crusts—or gluten-free pie crusts if needed.
  • Apples – I used a variety of granny smith, honey crisp, and pink lady. Avoid red apples or gals, which get mushy in the pie.
  • Lemon Juice
  • Sugar
  • Flour – For thickening the apple filling.
  • Cinnamon
  • Vanilla
  • Non-dairy milk + coarse sugar for the crust, optional

Get Started With Apple Pie Recipe

To get started with the Apple Pie Recipe, I prefer making shortcrust pastry in a food processor as it is quicker and mixes the ingredients more thoroughly. 

In this step, you will need to make sure you don’t pulse the mixture for too long. 

And in case you don’t have a food processor, you can just use a large bowl and a pastry cutter. 

Now, add all the ingredients to your food processor (or bowl) and mix until the mixture comes together. The dough will most likely need some chilled water so add it slowly until the pastry forms flaky crumbs, just like the image given below. 

If you have a food processor, this will only take 1-2 minutes.

Once the pastry comes together, place it in an airtight container or wrap it in plastic. Chilled dough is always easier to work with!

Making the Apple Pie Filling

While our pie crust is chilling, we can move to the next step of making the filling.

The Apple Pie Recipe works with both peeled as well as unpeeled apples. Once you have thinly sliced all the apples, just toss them in a large bowl with the rest of the filling ingredients. 

Now, cover the bowl and set it aside for at least 30 minutes. This will help all the flavors to develop and for the apple to soften and caramelize.

Roll out the Pastry Dough

When you have refrigerated your pastry for only 30 minutes, you should be able to roll it out easily. 

If your pastry has turned into a cold solid brick, keep it aside to let it soften at room temperature for another 30 minutes or so. 

Pro Tip: Roll out the pastry on a well-floured surface or in between two sheets of baking paper.

Assembling the pie

Next, we will transfer your rolled-out pastry to a greased pie tin. There are a few ways to do this which you can find easily on the Internet. 

If any large holes form in the pie crust, just patch them up with excess pastry. And don’t worry because no one will be able to see it after baking. 

Now, use of pair of scissors to trim off the excess pie crust. Then use a fork to prick the bottom of the mini apple pie crust.

Pile all your apples onto the pie crust, and make sure there are not any large gaps. For the top crust, you can make it simple or as decorative as you want, totally depends upon you.

If you don’t have a lot of time, top the pie with a single layer of pastry and cut a few ‘vents’ in the middle to allow air to escape while it is baking. You can also turn the pastry into a crumple to make an apple crumble pie or skip it altogether and make a vegan apple tart. 

Now, bake the pie at 375°F until the crust begins to lightly brown, about 20 minutes, then reduce heat to 350°F.

Bake your apple pie until the crust is golden brown and the juices are bubbling all over, an additional hour or up to another hour and a half, depending on the type of apples you are using.

Transfer your apple pie to a rack to cool for at least 1 hour. Serve slightly warm or at room temperature. Great with a side of vanilla ice cream.
