Directions to make Banana Cake

Step 1: Begin by preheating the oven to 275 degrees F (135 degrees C). Grease and flour a 9x13-inch pan.

Step 2: To make the cake, mix mashed bananas with lemon juice in a small bowl. In a medium bowl, mix flour, baking soda, and salt.

Step 3: Now cream sugar and butter in a large bowl until light and fluffy for about 3 to 4 minutes. Beat in eggs one at a time and mix in vanilla. Then beat in flour mixture alternately with buttermilk and add in banana mixture. Now, pour the batter into the prepared pan.

Step 4: Bake in the preheated oven until a toothpick added into the center of the cake comes out clean, about 1 hour. Then remove the cake from the oven and place it directly into the freezer for 45 minutes. This will help make the cake very moist.

Step 5: On the other hand, make the frosting with cream butter, and cream cheese until smooth. Beat in vanilla add confectioner sugar and beat on low speed until well combined, then on high until the frosting is smooth.

Step 6: Lastly, spread frosting on cooled cake. When warm or cool, slice and serve banana cake plain with your tea or coffee.

How to Store Banana Cake

To store the banana cake, you can place it in your kitchen at room temperature, the cake will stay well for 2-3 days. You can also wrap the cake in a cling film or store it in an airtight container and refrigerate it. It will keep the cake well for about the next 2 weeks.

Can You Freeze Banana Cake?

Yes, you can definitely freeze the unfrosted banana cake for up to three months. Simply wrap the cooled cake tightly in storage wrap and then wrap it in foil. Thaw the cake in the refrigerator overnight, then frost with freshly made frosting.

How to Mash Bananas

Mashing bananas is important in many different types of recipes, including this easy banana cake recipe. And there are also plenty of methods and appliances to use. Here’s a step-by-step process to mash a banana easily:

Step 1:  First, peel off the entire banana.

Step 2:  If you’re making baby food, take out the banana "string". You can also cut off both ends of the banana tips.

Step 3:  Now use the bottom of a spoon or fork to press down on the banana. Keep pressuring until the banana is well-mashed.

Tips for Soft Moist Banana Cake

  • Make sure your ingredients are at room temperature (eggs and butter)
  • Ensure you’re using a lemon juice (& milk) mixture.  Subbing in just milk or cream will not work.
  • When combining your butter, sugar, eggs, and vanilla, beat the mixture until very fluffy, almost the consistency of a fluffy buttercream frosting.  Give it about 5 minutes.
  • When adding the flour mixture you want to mix until just combined because over-mixing can cause a dense chewy result.
  • The cooking time for banana cake can vary!  Check your cake at 55 minutes, if it isn’t ready, and continue cooking until a toothpick comes out clean. Depending on your oven, this can be up to an additional 20 minutes.

Frequently Asked Questions

Q. How do I keep the cake from becoming overly sweet?

As the ingredients for this banana cake recipe are so easy to customize, you can simply withhold adding in sweeter items, such as sweetened coconut flakes, chocolate, or dried fruits.

Q. Can I make this banana cake vegetarian?

Yes, you can easily make this banana cake vegetarian by replacing oil with butter. Simply melt the butter and use it in the same quantity as that of the oil.

Q. How long will this banana cake stay fresh?

Your banana cake should last 2 to 3 days if you’ve stored it properly. To store, wrap the cake in plastic wrap and leave it on the counter. If you plan to store it in the fridge, then place it in an air-tight container or wrap it tightly in a cling film so that the cake does not dry out.

Q. Why shouldn’t I use a whisk to mix the ingredients?

It’s not best to use a whisk to mix the ingredients because whisking disturbs the combined ingredients and causes the batter to lose air that helps it to rise. When you use the folding method instead, you preserve more of the volume and will have a fuller banana cake.
